Product from certified organic agriculture. The level of excellence is obtained from olives from cultivars Frantoio, Moraiolo, Leccino collected by the method of stripping generally done by hand.
The olives are sent to the milling within a maximum time of 24 hours after collection.
Color: The oil is golden yellow, clear, with subtle shades of green.
Aroma: is strong and broad, fruity and sometimes intense, rich notes of artichoke, wild thistle and chicory which may be associated with intense notes of mint, sage and rosemary.
The tasteis full and complex, with spicy hints of black pepper and almond.
Bitterness and pungency are present in a harmonious and balanced.
Pairings: Excellent with carpaccio, raw vegetables, octopus salad, raw fish and grilled, grilled meats, aged cheeses, pasta.
